Cabbages, radish, red pepper, spring onion
and garlic, the main ingredients of Kimchi have various
vitamins. In addition, Kimchi is the alkali food containing
abundant calcium and inorganic matters, therefore the deficiency
of calcium and phosphorus, common in the Western's menu
does not matter to Korean. Korean people eating plentiful
Kimchi can intake a lactic acid without drinking the lactic
acid beverage. Also, it is known that the vegetables such
as cabbage, Kimchi's main material prevents large intestine
cancer, and the garlic, essential seasoning prevents stomach
cancer.
And, the protein, which is insufficient in the grain including
a rice can be supplemented from an amino acid contained
in the animal Jotgal(fish preserved with salt). When the
Kimchi becomes ripe, the protein in the Jotgal is decomposed
into an amino acid. It helps the absorption of vitamin B12(Thiamin)
which is easy to be insufficient in case the rice is the
stable food.
The fibrous cell abundant in the vegetables is indigested
from Kimchi, therefore it prevents the constipation and
restrain the inflammation of the intestines and colonitis.
Ripe Kimchi is lactic acid fermentative food producing organic
acid, alcohol and ester, therefore it improves the appetite.
