< Mushroom pickle >
The soy sauce of a beef pickle has superior taste and deep
Chosun soy sauce is the secret of that taste. The summer
pickle which is able to make with soy sauce in beef pickle
is the "Mushroom pickle". It is always matched
with the rice.
Ingredients
Sorts of mushrooms in proper volume, 3~4 unripe hot peppers,
300g beef shank, 6 cup water, half onion, 5 garlic pieces,
1 tea spoon pepper, sea tangle, Sauce for beef pickle :
6 cup meat broth, 3/4 cup Japanese soy sauce, 1/4 cup Chosun
soy sauce, 3 spoon sugar, 10 garlic pieces.
Directions
1. Add water, onion, garlic and whole pepper to the meat
which blood water is removed and boil them together. When
they start to boil up, then turn down the fire and boil
for 1 hour over slow fire. Put the soy sauce later because
the meat gets harder if it is added earlier.
2. Put meat, broth, soy sauce and sugar into the cooking
pot and boil them over slow fire.
3. Put tore mushrooms into the bowl, pour hot soy sauce
on it and repeat to pour the cooled soy sauce 2 times.
