"Shall we cook?"
Young Hee Noh(Left), a food stylist is introducing the summer
delicacy which fathers can cook easily(Won-Joong Joo, reporter)
Young Hee Noh(Left), a food stylist says that "The
wife and kids are impressed by only father's effort to prepare
the food" and "If the kids in vacation are participated
in cooking process, the taste gets better and the mood of
family will be improved". Noh introduced easy summer
cuisine. The materials are based on 4 person.
< Cold buckwheat noodles
>
Pour cold water when bubbles are rising from boiling. And
pour cold water again when boiled again. It will make the
noodle gummy.
Ingredients
30g anchovy without the internal organ and head(to remove
fish and bitter smell), 30g dried shiitake mushroom, 30cm
dried sea tangle, 50mg dried bonito slice, 800g buckwheat
noodles, 100g radish juice, 1/2 cup small spring onion(1
cup = 200ml)
Directions
1. Fry anchovies in the fan without oil and wash out dried
shiitake mushroom. Wipe a sea tangle with wet cotton cloth
because the taste of it gets worse if it is washed out.
2. Put anchovy, shiitake mushroom and sea tangle into a
pot, add 3 cup water, 1 cup refined rice wine and 3 cup
seasoning wine and soak in a freezer for one night(in case
of insufficient time, soak only for 3~4 hours)
3. Boil above water. Just before boiling, take sea tangle
out of it and boil hard for 5 minutes. Turn off the fire,
put dried bonito slice and leave for 20 minutes.
4. Put slightly wet cotton cloth on the sieve, pour this
water to filter. Pour 1 cup boiling water into the sieve
again.
5. Pour this water into a pot, put 2 cup soy sauce and 1/2
cup sugar, boil for 3 minutes and let them cool.
6. Put 1 cup shred ice into 1/4 cup broth to dilute.
7. Filter minced radish juice with the sieve to remove the
moisture and wash out small spring onion and sieve it.
8. Boil buckwheat noodle in boiling water, scrub with running
water, wash out with iced water and make a small pile.
9. Put noodle into ice-laid pot and prepare the sauce soup
including small spring onion, radish juice and mustard.
< Pork and vegetables with
garlic sauce >
Pork should cook completely but excessive cooking will make
the pork tough and reduce it's taste
Ingredients
400g pork around rib, 1 cup white wine, 3 big spring onion,
20 sesame leaves
Directions
1. Cut white part in root side of a spring onion into 4cm
pieces, divide into half, remove the insides and slice it.
Wash out in cold water and remove the moisture. Slice the
sesame, wash out with a water and remove the moisture.
2. Mix 3 spoon aged soy sauce, 3 spoon garnish, 2 spoon
sugar, 2 tea spoon light mustard, 2 spoon minced spring
onion and 1 spoon sesame oil and sieve them.
3. Put white wine and 2 cup water into a pot and boil them.
When boiling, put 3~4 sliced porks in 4cm length. If many
porks are put at one time, it's not cooked quickly and the
taste gets worse. When the color of pork gets white, then
take out of it, put into a iced water and remove the moisture
4. Put a pork into a plate and top with sesame leaf, sliced
spring onion and prepared sauce.
< Cold pasta >
It's better to boil the pasta in advance because all other
stuffs are cold.
Ingredients
240g short pasta, 2-3 tea spoon extra virgin olive oil(if
no, use cooking oil), 2 fresh mozzarella cheese(125g basis),
4 ripe red tomato, 6 basil leaves, sauce(1cup mayonnaise,
1spoon condensed milk, 100ml milk, 4 spoon worcester sauce(if
no, use 2 spoon aged soy sauce), 3 spoon lemon juice, 1
spoon sea mustard<if no, use 1 tea spoon mustard>)
Directions
1. Put enough water into a pot and put salt and pasta when
it boils. After boiling, take out with a basket to remove
the moisture, sprinkle olive oil and mix together.
2. Boil tomato slightly for 15 seconds, let it cool with
cool water, peel the skin and cut in 2X2cm size. If making
the knife mark in a tomato, it is convenient for removing
the skin.
3. Cut fresh mozzarella cheese in 2X2cm size and cut basil
in 1X1cm size.
4. Mix sauce stuffs
5. Put pasta, tomato and cheese in a big plate, mix with
sauce and sprinkle the basil. Serve it
< Eggplant cold dish >
Dipping into iced water quickly after boiling an eggplant
will contain it's pretty color
Ingredients
4 eggplants, 1 cucumber, 200g green bean sprouts, 50g beef
Direction
1. The preparation of materials is the most important. Divide
the eggplant into 2 pieces in vertical direction and put
it on the steamed pot. After boiling for 7 minutes, let
it cool with iced water and wipe water. Cut cucumber into
4cm piece, remove it's skin, slice and preserve with salt
slightly. After cleaning the head and tail of green bean
sprouts, put it into a pot and boil it with 1/4 cup water.
As soon as water boils, put out the fire and leave for 1minute.
Take out of it, let it cool with iced water and squeeze
water.
Cut beef in a thin slice and season with 1 tea spoon aged
soy sauce, 1/2 tea spoon sugar, 1/2 tea spoon minced garlic,
1 tea spoon minced spring onion, 1/2 tea spoon sesame oil
and pepper
2. Make the garnished soy sauce with 2 spoon garnish, 1
and 1/2 spoon sugar, 1 spoon Chosun soy sauce, 1 tea spoon
garlic juice, 1 spoon sesame oil, 4 small spring onion,
1/2 spoon sesame and stir it until sugar is completely melted.
3. Fry squeezed cucumber on the oiled-fan with strong fire
for 30 seconds and let it cool.
4. Mix green bean sprouts with 1/5 tea spoon salt, 1 tea
spoon sesame oil, pepper and sesame.
5. Fry seasoned beef on the fan with strong fire for 2~3
minutes and let it cool.
6. Spread the eggplant, put cucumber, green bean sprouts
and beef, wrap them and cut with proper piece.
7. Top sauce over them and sprinkle small spring onion and
sesame.
